This is such a simple soup to boost your sluggish mood, your immune system and basically feel all round super virtuous. You can buy all the ingredients specifically like I have today but it's equally useful for using up any greens you need to use up and have to hand.

3 large onions
3 large garlic cloves
2 large courgettes
(chop and sautee the first three ingredients)
Half bag frozen peas
Half bag baby spinach
Big handful baby broad beans
2 tins butter beans
Tin coconut milk
500ml vegetable stock
Handful basil leaves
Salt & Pepper
Toasted sunflower seeds to garnish, pansies are absolutely non essential but I couldn't resist.Next time I plan to add broccoli, kale and celery too.
Simmer everything for 30 mins then blend with a hand blender. Literally couldn't be easier. That's my lunches sorted for this week.
